Chicken Breasts with Herbed Goat Cheese

My mom sent me this recipe.  It came from somewhere.


Preheat oven to 375 degrees


3-4 chicken breasts, with skin

4-5 oz goat cheese

¾ tsp rosemary

¾ tsp thyme

¾ tsp minced garlic

1 tbsp EVOO

1 tsp Italian Seasoning, if desired


Wash and dry chicken breasts.  Set aside.  Mix goat cheese with rosemary, thyme and garlic.  Set aside.  To create pocket on chicken breast, lift an edge of the skin, run fingers under the skin, leaving small edge attached to the breast.  Place equal parts goat cheese mixture in pocket.  Place in glass baking dish.  Drizzle liberal EVOO over breasts.  Sprinkle with Italian Seasoning. Bake 25-30 minutes or until chicken breasts are done.
